How To Vegan: Mushroom Soup
30 minutes to soup.
You’ll want your stock pot, a cutting board, a knife, and a good blender like a Vitamix. Also:
An onion, chopped.
2 or so garlic gloves, minced.
8oz Shiitake (or whatever you have) mushrooms, chopped.
2 cups Veggie broth (I make a batch of this twice a year and keep it in the freezer)
2-3 tbsp Miso paste (I avoid soy for hormonal reasons. Chickpea miso makes a nice substitute.)
